Isuji Chilla - Indian Semolina Pancake

Ingredients
  • 2 cups of Semolina/Suji (easily available on stores like Freshco and Maxi)
  • 1 cup of Plain Yogurt
  • 2 cups of Water
  • 1 tsp of Baking Powder
  • Spices (like salt, pepper or any spices of your choice like red pepper, onion or garlic powder, Italian seasoning or any herb of your taste)
  • Fresh vegetables (finally chopped onions, capsicum(green bell pepper), tomatoes, finally grated carrots, beans or peas but make sure that you boil those veggies that does not taste good raw as we do not cook our pancake for that long that it can cook raw vegetables nicely or any veggiees of your choice)
  • Oil and a Non-Stick pan
Directions
  • Step 1 Initial step is to prepare our batter and for this you need to take a cup or any bowl just for the purpose of estimation. Take 2 cups of semolina flour and add 1 cup of plain yogurt to it and mix well. Meanwhile add approximately 2 cups of water while stirring. Make sure that there is no lump in the batter. Let the batter rest for like 20-15 minutes.
  • Step 2 While our batter is on rest you can finally chop all the vegetables you wish to add in your mixture and put your non-stick pan on a medium flame on heat.
  • Step 3 Take the batter and you will notice that the batter has became thick and now you can add spices of your taste according to the quantity of semolina you took like approximately 2 tablespoons of salt and 1 tablespoon of black pepper and rest of the spices you can add according to your taste.
  • Step 4 Mix all the spices well and if you feel your batter is thick you can add more water accordingly to adjust its consistency (not too thick and not too watery just keep a pancake mixture like consistency).
  • Step 5 Once we have the desired consistency just add all the chopped vegetables and mix well.
  • Step 6 Grease your pan with the oil (vegetable oil, olive oil or any oil you normally use at home) while keeping it on medium flame.
  • Step 7 As the oil is getting heated, last step is to add a small pinch of baking powder in the whole mixture and mix well.
  • Step 8 With the help of a big deep spoon pour the mixture on the pan and spread it evenly in a round shape along the base of the pan.
  • Step 9 Allow it to stand for like 3-5 minutes on a medium flame and you will notice the change in color as it starts cooking and then sprinkle few drops of oil on the top and flip carefully on the other side and again let it stand for like 3-4 minutes.
  • Step 10 Once it is cooked from both the sides (you will notice a slight color change to golden brown). It is ready to serve hot and fresh. {Perfect for Breakfast or Lunch}
  • Step 11 This dish can be served with any sauce of your choice. (Ketchup, Mayo, Garlicmayo, Sweet nd Sour, Spicy Hot Sauce, Tamarind Sauce etc.)
